INGREDIENTS
4 oz Lean Ground Turkey
2 slices Turkey Bacon
1 large Egg
1/4 cup Rolled Oats
1 medium Onion
1 medium Red Bell Pepper
2 tbsp Smoky BBQ Sauce
1 tsp Garlic Powder
1 tsp Smoked Paprika
Salt & Pepper to taste
PREPARATION
Preheat your oven to 375°F and lightly grease a small loaf pan.
Finely chop the onion and red bell pepper. In a large bowl, combine the lean ground turkey, chopped vegetables, rolled oats, and one beaten egg.
Add garlic powder, smoked paprika, salt, and pepper to the mixture. Mix gently until all ingredients are evenly distributed.
Lay out the turkey bacon slices and arrange them over the top of the meat mixture in the pan, slightly overlapping to form a crust.
Shape the mixture into a loaf within the pan. Brush the top with 1 tablespoon of smoky BBQ sauce.
Bake in the preheated oven for 35-40 minutes. Halfway through, remove the meatloaf and brush with the remaining BBQ sauce.
Once cooked through and the internal temperature reaches 165°F, remove from oven and let stand for 5 minutes before slicing and serving.
