INGREDIENTS
1/2 cup Rolled Oats (processed to oat flour, 40g)
1 medium Banana (100g)
3 Egg Whites (approx. 100g)
1 scoop Whey Protein Powder, Vanilla (30g)
1/2 teaspoon Baking Powder
1/2 teaspoon Cinnamon
PREPARATION
In a blender, combine the rolled oats and baking powder. Blend until a fine oat flour forms.
Peel the banana and add it to the blender along with egg whites and whey protein powder. Sprinkle in the cinnamon.
Blend the mixture until smooth and well combined. Let the batter rest for 3-5 minutes to thicken slightly.
Heat a non-stick skillet or griddle over medium heat. Lightly coat with a cooking spray or a minimal amount of oil.
Pour small portions of the batter onto the skillet to form pancakes. Cook until bubbles appear on the surface and the edges start to set, about 2-3 minutes.
Carefully flip the pancakes and cook for another 1-2 minutes until golden and cooked through.
Serve warm. Optionally, for a caramelized twist, sauté a few extra banana slices in a little pan with a touch of cinnamon until they become golden and syrupy, and top the pancakes.
