PREPARATION
Preheat your oven to 400°F. Slice the spaghetti squash in half lengthwise, remove the seeds, drizzle with a bit of olive oil, season with salt and pepper, and roast cut side down on a baking sheet for 30-40 minutes until tender.
While the squash roasts, heat a skillet over medium heat and add the teaspoon of olive oil. Sauté the minced garlic until fragrant.
Add the turkey bacon slices to the skillet and cook until crispy. Remove from the skillet and chop into bite-sized pieces.
