PREPARATION
Prepare all ingredients by draining and patting dry the shrimp and tofu. Cut tofu into small cubes.
Heat the sesame oil in a large non-stick skillet or wok over medium-high heat.
Add the tofu cubes to the skillet and stir-fry for about 2-3 minutes until lightly golden.
Add the shrimp to the skillet and cook for another 2 minutes until they start to turn pink.
Stir in the cauliflower rice and continue stir-frying for 3-4 minutes until it's tender but still retains a slight crunch.
