INGREDIENTS
250g Extra Firm Tofu
100g Shelled Edamame
100g Broccoli
100g Red Bell Pepper
50g Carrot
1 tbsp Fresh Ginger, grated
1 clove Garlic, minced
1 tbsp Sesame Oil
1 tbsp Low-Sodium Soy Sauce
1 tsp Toasted Sesame Seeds
PREPARATION
Press and drain the tofu for 15-20 minutes, then cut it into bite-sized cubes.
In a non-stick skillet, heat half of the sesame oil over medium heat. Add the tofu cubes and pan-fry until all sides turn golden and crispy. Remove tofu and set aside.
Using the same skillet, add the remaining sesame oil and sauté the minced garlic and grated ginger until fragrant.
Add the chopped broccoli, red bell pepper, and carrot to the skillet. Stir-fry for about 4-5 minutes until vegetables are just tender but still crisp.
Return the crispy tofu to the pan along with the shelled edamame. Drizzle with low-sodium soy sauce and toss everything together until well combined and heated through.
Finish by sprinkling toasted sesame seeds over the dish. Serve warm and enjoy your balanced, flavorful meal.
