INGREDIENTS
2 cups Cauliflower Rice (200g)
1 Large Egg (50g)
1/2 cup shredded Part-Skim Mozzarella (56g)
1/4 cup grated Parmesan Cheese (28g)
1/4 cup low-sugar Tomato Sauce (60g)
10 Fresh Basil Leaves (4g)
PREPARATION
Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
Steam or microwave the cauliflower rice until tender. Allow it to cool slightly, then place in a clean kitchen towel and squeeze out as much water as possible.
In a large bowl, combine the well-drained cauliflower rice, egg, mozzarella, and Parmesan cheese. Mix thoroughly until a dough-like consistency forms.
Transfer the mixture onto the prepared baking sheet. Press and shape the mixture into a thin, even circular crust, creating a slight rim on the edges.
Bake the crust in the preheated oven for about 15 minutes or until it begins to turn golden and firm up.
Remove the crust from the oven and spread the tomato sauce evenly over the top.
Return the pizza to the oven and bake for an additional 7-10 minutes until the cheese is bubbly and slightly golden.
Once out of the oven, garnish with fresh basil leaves, slice, and serve warm.
