PREPARATION
Preheat your oven to 425°F (220°C) for the roasted baby potatoes.
Wash the baby potatoes and cut them in half if they are larger. Toss them in a bowl with olive oil, salt, and pepper.
Spread the potatoes evenly on a baking sheet and roast for 20-25 minutes until tender and lightly crisped on the edges.
While the potatoes are roasting, pat the steak dry and season both sides generously with salt and pepper.
