INGREDIENTS
1 salmon fillet (198g)
1 cup green beans (125g)
1 cup cauliflower (107g)
1 garlic clove
1 tsp olive oil
Salt and Pepper, to taste
PREPARATION
Pat the salmon fillet dry and season both sides with salt and pepper.
Heat a non-stick skillet over medium-high heat and add 1 tsp of olive oil.
Place the salmon fillet skin-side down and sear for about 4-5 minutes until a golden crust forms.
Carefully flip the salmon and cook for an additional 3-4 minutes until it reaches your desired doneness. Remove from heat and keep warm.
Steam or boil the green beans until just tender, about 4-5 minutes. Drain well.
In a small pan, sauté the minced garlic (from the clove) over low heat for about 1 minute until fragrant, then toss with the green beans.
For the cauliflower mash, steam the cauliflower florets until very tender, about 8-10 minutes. Transfer to a bowl and mash until smooth using a fork or immersion blender. Season with a pinch of salt and pepper.
Plate the seared salmon alongside a serving of garlic green beans and a generous scoop of cauliflower mash. Serve immediately.
