INGREDIENTS
5 oz Chicken Breast
1 cup Cauliflower Rice
1 large Egg
1/2 cup Green Peas (Frozen)
1/2 cup diced Carrot
1/4 cup diced Onion
1 clove Garlic
1 teaspoon Sesame Oil
1 tablespoon Low Sodium Soy Sauce
PREPARATION
Cut the chicken breast into bite-sized pieces and season lightly with salt and pepper.
Heat the sesame oil in a non-stick skillet or wok over medium-high heat.
Add the chicken pieces and sauté until they are browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, add diced onion and minced garlic, and sauté until aromatic and softened, about 2 minutes.
Add the diced carrot and cook for an additional 2 minutes.
Stir in the cauliflower rice and green peas, and continue to cook for 3-4 minutes until the vegetables are tender.
Push the vegetable mixture to the side of the skillet and crack the egg into the empty space. Immediately scramble the egg until fully cooked, then mix with the vegetables.
Return the cooked chicken to the skillet and drizzle the low sodium soy sauce over the mixture. Stir everything together until well combined and heated through.
Taste and adjust seasoning if needed before serving.
