Enjoy a vibrant plate featuring perfectly seared salmon with a crisp, golden exterior paired with tender steamed asparagus and a creamy garlic-infused cauliflower mash. This dish is both light and satisfying, combining robust flavors and textures in every bite.
INGREDIENTS
5 oz Salmon Fillet
120 g Asparagus Spears
150 g Cauliflower
1 clove Garlic
2 tbsp Plain Nonfat Greek Yogurt
1 tsp Olive Oil (for mash)
2 tsp Olive Oil (for salmon)
Salt (dash)
Black Pepper (dash)
PREPARATION
Begin by patting the salmon fillet dry and season both sides with a dash of salt and black pepper.
Heat 2 teaspoons olive oil in a skillet over medium-high heat. Once hot, add the salmon skin-side down and sear for about 3-4 minutes until the skin is crispy, then flip and cook for another 3-4 minutes until the salmon is just cooked through.
While the salmon cooks, trim the woody ends off the asparagus and steam them for about 4-5 minutes until tender yet still crisp.
For the cauliflower mash, cut the cauliflower into florets along with one garlic clove. Steam them for about 8-10 minutes until soft. Transfer to a bowl.
Add 2 tablespoons of plain nonfat Greek yogurt and 1 teaspoon olive oil to the cauliflower and garlic. Mash until smooth, and season with a pinch of salt and pepper.
Plate the seared salmon alongside the steamed asparagus and a generous scoop of garlic cauliflower mash. Serve warm and enjoy!
