1 cup Asparagus (134g)
1 cup Cauliflower (mashed, 150g)
1 tsp Olive Oil (5g)
2 tbsp Nonfat Greek Yogurt (30g)
1 clove Garlic
1 wedge Lemon
Salt and Pepper to taste
PREPARATION
Pat the salmon dry and season with salt and pepper. Mince the garlic.
Heat olive oil in a nonstick skillet over medium-high heat. Add the salmon, skin side down if applicable, and sear for about 3-4 minutes per side until cooked through and nicely browned.
Meanwhile, lightly steam or sauté the asparagus until tender but still crisp, about 3-4 minutes.
For the cauliflower mash, steam cauliflower florets until very tender. Transfer to a bowl and mash with a fork or immersion blender. Stir in a little salt and pepper.
