INGREDIENTS
280 grams Firm Tofu
2 Large Eggs
1 cup Mixed Vegetables (Bell Pepper, Snap Peas, Carrot)
1 tablespoon Tahini
1 clove Garlic
1 teaspoon Fresh Ginger
1 tablespoon Low-Sodium Soy Sauce
1 teaspoon Sesame Oil
PREPARATION
Press the tofu to remove excess moisture and cut it into bite-sized cubes.
Whisk the eggs in a bowl and set aside.
Heat the sesame oil in a large non-stick pan or wok over medium heat. Add the minced garlic and grated ginger, stirring until fragrant.
Add the tofu cubes and stir fry for about 5-6 minutes until lightly golden on all sides.
Toss in the mixed vegetables and continue to stir fry for another 3-4 minutes until they are just tender but still crisp.
Push the tofu and vegetables to the side and pour in the whisked eggs. Allow them to set briefly, then scramble and mix with the tofu and vegetables.
In a small bowl, combine the tahini and low-sodium soy sauce. Add a splash of water if needed to achieve a smooth, drizzle-able consistency.
Drizzle the tahini sauce over the stir fry, gently tossing to ensure everything is evenly coated. Serve immediately.
