INGREDIENTS
1 cup Black Beans (mashed)
1/2 cup Cooked Quinoa
2 Large Eggs
1/4 cup Rolled Oats
1/4 cup diced Red Bell Pepper
1 Jalapeño Pepper, minced
2 Tbsp Fresh Cilantro, chopped
2 Garlic Cloves, minced
1 tsp Ground Cumin
1 tsp Chili Powder
Salt and Pepper to taste
PREPARATION
In a large bowl, mash the black beans until mostly smooth, leaving a few chunks for texture.
Stir in the cooked quinoa, rolled oats, diced red bell pepper, minced jalapeño, chopped cilantro, and minced garlic.
Add the ground cumin, chili powder, salt, and pepper. Mix until well combined.
Beat the eggs in a small bowl, then add them to the mixture, stirring until all ingredients are evenly incorporated.
Form the mixture into burger patties of your desired size.
Heat a non-stick skillet over medium heat. Lightly spray with cooking spray or add a drizzle of olive oil if preferred.
Cook the patties for about 4-5 minutes per side, or until they form a nice golden crust and are heated through.
Serve warm on their own, or with your favorite healthy bun and toppings. Enjoy!
