1/4 cup Whole Wheat Panko Breadcrumbs (15g)
1 large Egg (50g)
PREPARATION
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Slice the eggplant into 1/4-inch thick rounds. Lightly salt them and let sit for 10 minutes to draw out moisture. Pat dry with paper towels.
In a shallow bowl, whisk the egg. In another bowl, add whole wheat panko breadcrumbs.
