INGREDIENTS
5 oz Lean Ground Turkey
1 large Egg
1 medium Zucchini
1/4 small Onion
1 Garlic Clove
1 Tbsp Whole Wheat Breadcrumbs
1/2 Tbsp Olive Oil
2 Tbsp Fresh Parsley & Basil
Salt & Pepper to taste
PREPARATION
Preheat your oven to 400°F.
In a bowl, combine lean ground turkey, the egg, chopped onion, minced garlic, whole wheat breadcrumbs, and the finely chopped fresh parsley and basil. Season with salt and pepper.
Mix thoroughly until all ingredients are well incorporated, then form the mixture into evenly sized meatballs.
Place the meatballs on a baking sheet lined with parchment paper and bake in the preheated oven for about 15-18 minutes or until they are cooked through.
While the meatballs are baking, spiralize the zucchini to form noodles. In a skillet over medium heat, add olive oil and lightly sauté the zucchini noodles for 2-3 minutes until just tender.
Plate the zucchini noodles as a bed and top with the warm turkey meatballs. Garnish with additional herbs if desired and serve immediately.
