PREPARATION
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
In a bowl, combine 200 grams of cauliflower rice with 1 beaten egg. If desired, lightly season with salt and pepper.
Mix in half of the 4 oz shredded part-skim mozzarella cheese to help bind the cauliflower mixture.
Spread the cauliflower mixture evenly on the baking sheet, pressing it into a thin, round crust.
Bake the crust for 15-18 minutes until it begins to turn golden and firm up.
Remove the crust from the oven and spread 1/4 cup of tomato sauce evenly over it.
Top the sauce with the remaining mozzarella cheese and sprinkle the fresh basil leaves over the top.
Drizzle 1 teaspoon of extra virgin olive oil over the toppings.
Return the pizza to the oven and bake for an additional 5-7 minutes until the cheese has melted and slightly browned.
