INGREDIENTS
6 oz Salmon Fillet
1/2 cup Asparagus
1 cup Cauliflower
1/2 tsp Olive Oil
2 tbsp Non-Fat Greek Yogurt
Salt and Pepper to taste
PREPARATION
Pat the salmon fillet dry and season lightly with salt and pepper.
Heat a non-stick skillet over medium-high heat, then add the salmon fillet, skin-side down if applicable. Sear for about 3-4 minutes on each side until the exterior is crisp and the interior is just cooked through.
While the salmon is cooking, steam the asparagus in a steamer basket over boiling water for about 3-4 minutes until tender yet still vibrant.
For the cauliflower mash, steam the cauliflower florets until very tender (about 8-10 minutes). Transfer the steamed cauliflower to a blender or food processor, add 1/2 teaspoon olive oil and 2 tablespoons non-fat Greek yogurt, then blend until smooth. Season with salt and pepper to taste.
Plate the salmon alongside the asparagus and a generous serving of cauliflower mash. Serve immediately.
