INGREDIENTS
3 large Eggs
2 ounces Feta Cheese
2 cups Fresh Spinach
1 sheet Phyllo Dough
1 teaspoon Olive Oil
1/4 small Yellow Onion
1/2 Garlic Clove
1 tablespoon Fresh Dill (optional)
Salt & Pepper to taste
PREPARATION
Preheat your oven to 375°F (190°C). Lightly grease a small baking dish.
Finely chop the yellow onion and mince the garlic. In a non-stick skillet, heat 1 teaspoon of olive oil over medium heat. Sauté the onion and garlic until softened and fragrant, about 3-4 minutes.
Add the fresh spinach to the skillet and cook until just wilted, stirring occasionally. Season lightly with salt and pepper. Remove from the heat and let it cool slightly.
In a bowl, whisk the eggs with a pinch of salt and pepper. Stir in the crumbled feta cheese and, if using, chopped fresh dill.
Gently fold the sautéed spinach mixture into the egg mixture.
Place the phyllo dough sheet in the prepared baking dish. Pour the egg, feta, and spinach mixture over the phyllo, gently spreading it out evenly.
Bake in the preheated oven for 20-25 minutes, or until the custard is set and the phyllo edges turn a crisp golden brown.
Remove from the oven and allow to cool slightly before serving. Enjoy warm for a satisfying meal.
