1/4 cup diced Red Onion

1 tsp Cumin
1 tsp Coriander
1/2 tsp Cinnamon
Salt & Pepper to taste
PREPARATION
Preheat the oven to 375°F.
Season the lamb with salt and pepper. In a skillet over medium-high heat, sear the lamb on all sides until browned.
Remove the lamb and set aside. In the same skillet, add the diced red onion and minced garlic, sautéing until translucent and fragrant.
Add the cumin, coriander, and cinnamon to the onions and garlic, stirring for about 30 seconds to release the spices’ aromas.
Return the lamb to the skillet and toss to coat with the spices.
Add diced sweet potato (or thin slices) and dried apricots to the skillet, stirring to combine with the lamb and spices.
