1 cup Cauliflower
1 large Egg
1/4 cup shredded Mozzarella Cheese
2 tbsp Buffalo Sauce

Salt and Pepper to taste
PREPARATION
Preheat your oven to 425°F.
Steam or microwave the cauliflower until tender. Once cooled slightly, pulse it in a food processor until it resembles rice.
Mix the cauliflower with the egg, garlic powder, salt, and pepper. Transfer the mixture onto a parchment-lined baking sheet, pressing it flat and shaping it into a thin round crust.
Bake the cauliflower crust for 15-20 minutes or until it starts to crisp and turn golden.
While the crust bakes, season the chicken breast with salt and pepper. Cook it in a skillet over medium heat until browned and fully cooked, then shred it into bite-sized pieces.
