Citrus-Herb Grilled Salmon with Fresh Herbs
Enjoy a beautifully grilled wild salmon fillet infused with a bright citrus-herb marinade, perfectly accented by a light baby spinach salad drizzled with extra olive oil. The dish is a refreshing blend of zesty lemon, aromatic fresh herbs, and tender, flaky salmon, making it a satisfying meal for any time of the day.
INGREDIENTS
6 ounces Salmon Fillet
1 teaspoon Olive Oil (Marinade)
1 whole Fresh Lemon (juiced and zested)
2 tablespoons Fresh Mixed Herbs (Parsley & Dill)
1 cup Baby Spinach
1 teaspoon Extra Olive Oil (Salad Dressing)
PREPARATION
In a small bowl, whisk together the olive oil, juice and zest from the lemon, and chopped fresh herbs.
Place the salmon fillet in a shallow dish and pour the citrus-herb marinade over it. Let it marinate for at least 20 minutes to absorb the flavors.
Preheat your grill (or grill pan) to medium-high heat. Lightly oil the grill grates.
Grill the salmon fillet for approximately 4-5 minutes per side, or until it is just cooked through and has nice grill marks.
While the salmon is grilling, toss the baby spinach with the extra olive oil to lightly dress the greens.
Plate the grilled salmon alongside the dressed spinach, and serve with any remaining citrus-herb sauce drizzled on top.
