INGREDIENTS
200g Extra Firm Tofu
1 cup chopped Broccoli
0.5 cup Shelled Edamame
1 tbsp Sesame Seeds
1 tsp Sesame Oil
1 tsp Fresh Ginger, grated
1 clove Garlic, minced
1 tbsp Low-Sodium Soy Sauce
1 tsp Rice Vinegar
1 tsp Cornstarch
PREPARATION
Preheat your oven to 425°F. Toss the chopped broccoli with a light drizzle of sesame oil, salt, and pepper. Spread it on a baking sheet and roast for about 15-20 minutes until tender and lightly crisped.
While the broccoli roasts, press the tofu gently with paper towels to remove excess moisture. Cut the tofu into 1-inch cubes.
In a small bowl, whisk together the low-sodium soy sauce, rice vinegar, grated ginger, minced garlic, and sesame oil.
Lightly toss the tofu cubes in cornstarch to help achieve a crispy exterior. Then, heat a non-stick skillet over medium-high heat and add the tofu cubes. Sauté until all sides are golden and crispy, about 5-7 minutes.
Pour the prepared sesame-ginger sauce over the tofu in the pan. Allow the tofu to absorb the sauce and become well-coated for another 1-2 minutes.
Gently stir in the shelled edamame into the tofu mixture, warming them through.
To serve, plate the crispy sesame ginger tofu and edamame alongside the roasted broccoli. Sprinkle with sesame seeds for an extra burst of flavor and crunch.
