INGREDIENTS
150g Cauliflower
1 large Egg White
1/4 cup Almond Flour
3 oz Chicken Breast
2 tbsp Buffalo Sauce
1 tbsp Blue Cheese Crumbles
1 Green Onion
PREPARATION
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
Rice the cauliflower by pulsing it in a food processor until you achieve a rice-like consistency. Steam or microwave the cauliflower rice for 4-5 minutes until just tender, then let it cool.
Once cooled, mix the cauliflower rice with the egg white and almond flour in a bowl. Stir until well combined; season lightly with salt and pepper if desired.
Place the cauliflower mixture onto the prepared baking sheet and press it into a thin, even round crust shape.
Bake the crust for about 15-20 minutes or until it begins to turn golden and firm up.
While the crust bakes, cook the chicken breast (if not pre-cooked) by seasoning lightly and either grilling or baking until fully cooked. Chop or shred the chicken into bite-sized pieces.
Toss the cooked chicken with buffalo sauce until evenly coated.
Remove the crust from the oven, then evenly sprinkle the buffalo chicken on top. Add blue cheese crumbles and sliced green onion over the chicken.
Return the pizza to the oven for an additional 5-7 minutes to allow the toppings to meld and the blue cheese to soften slightly.
Remove from the oven, slice, and serve warm.
