INGREDIENTS
5 ounces Ground Turkey
1 medium Sweet Potato
1 medium Red Bell Pepper
1/4 cup chopped Onion
1 large Egg
1 teaspoon Olive Oil
1 clove Garlic
Mixed Dried Herbs (to taste)
Salt and Pepper (to taste)
PREPARATION
Preheat your oven to 400°F.
Peel and dice the sweet potato into small cubes for even roasting. Dice the red bell pepper and chop the onion.
In an oven-safe skillet, heat the olive oil over medium heat. Sauté the chopped onion, red bell pepper, and garlic until they begin to soften, about 3-4 minutes.
Add the ground turkey to the skillet, breaking it up with a spatula, and cook until it begins to brown.
Mix in the sweet potato cubes and season the mixture with mixed dried herbs, salt, and pepper.
Transfer the skillet to the preheated oven and roast for 15-20 minutes or until the sweet potato is tender and the turkey is fully cooked.
In the last few minutes of cooking, create a small well in the center of the skillet and crack the egg into the space. Return to the oven and bake until the egg is set, approximately 5 minutes.
Remove from the oven and allow the skillet to cool slightly before serving.
