300g Extra Firm Tofu
100g Shelled Edamame
1 cup Broccoli (chopped)
0.5 medium Red Bell Pepper
2 cloves Garlic
1 tbsp Fresh Ginger
1 tbsp Low Sodium Soy Sauce
1 tsp Rice Vinegar
1 tsp Sesame Oil
1 tsp Sesame Seeds
1 tbsp Cornstarch
PREPARATION
Press the tofu gently between paper towels to remove excess moisture, then cut it into 1-inch cubes.
In a bowl, toss the tofu cubes with cornstarch until evenly coated.
Heat the sesame oil in a non-stick pan over medium-high heat and add the tofu. Fry until all sides are golden and crispy, about 6-8 minutes. Remove tofu from the pan and set aside.
In the same pan, add minced garlic and grated ginger. Sauté for about 30 seconds until fragrant.
Add chopped broccoli and red bell pepper, stirring frequently. Cook for about 3-4 minutes until the vegetables are slightly tender but still crisp.
Return the crispy tofu to the pan and add the shelled edamame.
Drizzle the low sodium soy sauce and rice vinegar over the mixture. Stir-fry everything together for another 1-2 minutes to blend the flavors.
