A comforting twist on a classic mac dish featuring tender roasted cauliflower tossed in a savory, creamy sauce and topped with crispy roasted chickpeas and a boost of nutritional yeast. This dish is light yet satisfying, combining wholesome ingredients with a delightful crunch, perfect for any meal of the day.
INGREDIENTS
500 g Cauliflower
1 cup Chickpeas (canned, drained)
2 tbsp Nutritional Yeast
0.5 tbsp Olive Oil
0.5 cup Unsweetened Almond Milk
0.5 tsp Garlic Powder
0.5 tsp Smoked Paprika
Salt and Pepper to taste
PREPARATION
Preheat your oven to 425°F (220°C).
Toss the drained chickpeas with half the olive oil, smoked paprika, garlic powder, salt, and pepper. Spread them on a baking tray and roast for about 20-25 minutes until crispy, stirring halfway through.
Meanwhile, steam or boil the cauliflower florets until tender, about 8-10 minutes, then drain well.
In a blender, combine the steamed cauliflower, unsweetened almond milk, nutritional yeast, a pinch of salt, and pepper. Blend until smooth and creamy, adjusting thickness as desired.
Pour the cauliflower sauce into a baking dish, and gently stir in most of the roasted chickpeas, reserving a few for topping.
Bake the dish in the preheated oven for 10-12 minutes to meld the flavors.
Remove from the oven, sprinkle the remaining chickpeas on top for added crunch, and serve warm.
