INGREDIENTS
6 oz Chicken Breast
1 ear Sweet Corn
1 medium Roasted Potato
2 tsp Olive Oil
1 clove Garlic, minced
2 tbsp Fresh Herbs (Rosemary & Thyme)
Salt and Pepper to taste
PREPARATION
Preheat your grill or grill pan over medium-high heat and your oven to 400°F for roasting the potato.
Rub the chicken breast with 1 tsp olive oil, minced garlic, chopped fresh herbs, salt, and pepper. Let it marinate for at least 10 minutes.
While the chicken marinates, scrub the potato, cut it into cubes or wedges, toss with the remaining olive oil, salt, pepper, and a sprinkle of herbs, then spread on a baking sheet.
Roast the potato in the oven for about 25-30 minutes or until golden and crisp, turning halfway through for even cooking.
Place the chicken on the grill and cook for approximately 6-7 minutes per side or until the internal temperature reaches 165°F.
For the sweet corn, either grill it along with the chicken for about 5-7 minutes, turning periodically until lightly charred, or boil it for 5-7 minutes if preferred.
Plate the grilled chicken with the roasted potatoes and sweet corn. Garnish with a few extra fresh herbs if desired and serve warm.
