INGREDIENTS
6 oz Lean Ground Turkey
1 large Egg
1/4 cup Panko Breadcrumbs
2 tbsp Fresh Parsley (chopped)
1 tsp Fresh Thyme (chopped)
1 clove Garlic, minced
2 tbsp Onion, finely chopped
1 cup Mushrooms, sliced
1/4 cup Skim Milk
1 tsp Olive Oil
Salt and Pepper to taste
PREPARATION
Preheat oven to 375°F and lightly grease a small loaf pan.
In a bowl, combine lean ground turkey, egg, panko breadcrumbs, chopped parsley, thyme, minced garlic, and finely chopped onion. Season with salt and pepper, then mix until just combined.
Place the mixture into the loaf pan, pressing gently to form an even loaf.
Bake the meatloaf in the preheated oven for 25-30 minutes or until cooked through.
While the meatloaf is baking, prepare the mushroom gravy. In a pan over medium heat, warm the olive oil and add the sliced mushrooms. Sauté until softened, about 5 minutes, then stir in the skim milk. Let it simmer for 3-4 minutes; season with a pinch of salt and pepper.
Once the meatloaf is done, let it rest for 5 minutes before slicing. Serve slices of turkey meatloaf topped with the warm mushroom gravy.
