PREPARATION
Preheat your oven to 400°F.
Wash the baby potatoes and cut them in halves if they are larger. Toss them with 1 tsp olive oil, salt, pepper, and a sprinkle of fresh rosemary and thyme.
Spread the potatoes on a baking sheet and roast in the oven for about 20-25 minutes, or until golden and tender.
While the potatoes roast, pat the 6 oz sirloin steak dry with a paper towel and season both sides with salt and pepper.
