PREPARATION
Preheat the oven to 400°F (200°C) for roasting the potatoes.
Wash and halve the baby potatoes. Toss them gently with extra virgin olive oil, salt, and black pepper.
Spread the potatoes on a baking sheet and roast for 20-25 minutes or until tender and lightly crispy.
While the potatoes roast, pat the steak dry and season generously with salt and black pepper.
Heat a skillet over medium-high heat. Once hot, add the steak and sear for 3-4 minutes per side for medium-rare (or adjust timing to your preferred doneness).
