INGREDIENTS
6 oz Salmon Fillet
1 cup Green Beans
1 cup Cauliflower Florets
1 tbsp Extra Virgin Olive Oil
2 cloves Garlic
1 tsp Lemon Juice
PREPARATION
Pat the salmon dry and season lightly with salt and pepper. Drizzle with lemon juice.
Heat a non-stick skillet over medium-high heat and add half of the olive oil. Place the salmon skin-side down and cook for about 3-4 minutes until a golden crust forms. Flip and cook for another 3-4 minutes or until desired doneness is reached.
Trim the green beans and roughly chop the garlic. In a separate pan, add the remaining olive oil and sauté the garlic until fragrant. Add the green beans and sauté for about 4-5 minutes until crisp-tender. Season with salt and pepper to taste.
For the cauliflower mash, steam the cauliflower florets until very tender, about 8-10 minutes. Transfer to a bowl and mash with a fork or immersion blender until smooth. Adjust seasoning with salt and pepper.
Plate the salmon alongside a serving of garlic green beans and a generous scoop of cauliflower mash, and serve immediately.
