Savor a light yet flavorful stir-fry featuring garlicky, ginger-infused extra firm tofu paired with shirataki noodles and vibrant vegetables. This dish is balanced with a fresh crunch from broccoli and red bell pepper, enriched by the silky addition of a lightly scrambled egg and finished with a hint of sesame oil and tamari for a punch of umami.
INGREDIENTS
1 package Shirataki Noodles (200g)
300g Extra Firm Tofu
1 Large Egg
1 cup Broccoli (91g)
1 cup Red Bell Pepper slices (92g)
3 cloves Garlic
1 tbsp Fresh Ginger
1 tbsp Tamari Sauce
1 tsp Sesame Oil
PREPARATION
Rinse the shirataki noodles thoroughly under hot water and drain well. Set aside.
Press the tofu gently to remove excess moisture and cut into bite-sized cubes.
Heat the sesame oil in a non-stick skillet or wok over medium heat. Add minced garlic and grated ginger, stirring for 30 seconds until fragrant.
Add the tofu cubes to the pan and stir-fry for about 5 minutes until golden on all sides.
Push the tofu to one side of the pan and crack the egg into the empty space. Scramble it until fully cooked, then mix it with the tofu.
Add the broccoli and red bell pepper slices along with the prepared shirataki noodles. Stir-fry everything for 3-4 minutes until the vegetables are tender-crisp.
Drizzle the tamari sauce over the stir-fry and toss well to combine all the flavors.
Taste and adjust seasonings if needed. Serve warm and enjoy your nutritious, protein-packed stir-fry.
