INGREDIENTS
75 g Black Bean Pasta
0.33 cup Cannellini Beans
100 g Firm Tofu
2 tbsp Nutritional Yeast
1/2 cup Unsweetened Almond Milk
1 tsp Olive Oil
2 cloves Roasted Garlic
3 tbsp Mixed Fresh Herbs
Salt & Pepper to taste
PREPARATION
Cook the black bean pasta according to package instructions until al dente. Drain and set aside.
Preheat your oven to 400°F. Wrap a head of garlic (or separate cloves) in foil with a drizzle of olive oil and roast for about 30-35 minutes until soft. Once roasted, squeeze out or mash 2 cloves of garlic.
In a blender, combine the roasted garlic, firm tofu, unsweetened almond milk, nutritional yeast, olive oil, and a pinch of salt and pepper. Blend until smooth to create a creamy sauce.
In a large pan over medium heat, warm the sauce and stir in the cannellini beans. Allow the mixture to heat through for 3-4 minutes.
Add the cooked pasta to the pan and toss gently to coat evenly with the creamy sauce and beans.
Finish by stirring in the mixed fresh herbs. Adjust salt and pepper to taste.
Serve warm and enjoy the delicious, protein-packed pasta dinner.
