Enjoy a healthier twist on a classic favorite featuring a tender chicken breast encrusted with a flavorful, crunchy breadcrumb and Parmesan coating, elevated with aromatic fresh herbs. Baked to perfection, this dish is both crunchy on the outside and juicy on the inside, finished with a light layer of tangy marinara.
INGREDIENTS
6 oz Chicken Breast
1/4 cup Whole Wheat Breadcrumbs
2 tbsp Grated Parmesan Cheese
1 large Egg White
1/4 cup Marinara Sauce
2 tbsp Fresh Mixed Herbs (Basil & Parsley)
Salt and Pepper to taste
PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
In a shallow bowl, lightly beat the egg white. In a separate bowl, combine whole wheat breadcrumbs, grated Parmesan, and chopped fresh herbs. Season the breadcrumb mixture with a pinch of salt and pepper.
Pat the chicken breast dry and season with salt and pepper. Dip the chicken first into the egg white, then evenly coat it in the breadcrumb mixture, pressing gently to adhere.
Place the coated chicken breast onto the prepared baking sheet. Bake in the preheated oven for 20-25 minutes or until the chicken reaches an internal temperature of 165°F.
Optional: In the last 5 minutes of baking, spoon marinara sauce over the chicken to warm and slightly meld the flavors.
Remove from the oven, garnish with additional fresh herbs if desired, and serve immediately.
