INGREDIENTS
8 oz Salmon Fillet (227g)
6 spears Asparagus (134g)
1 cup Cauliflower florets (100g)
1/4 cup Nonfat Greek Yogurt (60g)
1 tsp Olive Oil
Salt & Pepper to taste
PREPARATION
Season the salmon fillet generously with salt and pepper.
Heat a non-stick skillet over medium-high heat and add olive oil.
Once the oil is shimmering, place the salmon fillet skin side down and sear for about 4-5 minutes until a golden crust forms.
Flip the salmon and continue cooking for another 3-4 minutes until the fish is just cooked through and flakes easily.
Meanwhile, bring a small pot of water to boil and add the asparagus. Steam for 4-5 minutes until tender but still crisp.
For the cauliflower mash, steam the cauliflower florets in a steamer or in a pot with a splash of water for about 8-10 minutes until soft.
Transfer the steamed cauliflower to a blender or bowl and blend or mash with nonfat Greek yogurt, salt, and pepper until smooth and creamy.
Plate the seared salmon, arrange the steamed asparagus on the side, and serve with a generous scoop of cauliflower mash.
