Enjoy a delicious twist on a classic Italian favorite with a crisp cauliflower crust, melty part-skim mozzarella, a fresh tomato sauce, and vibrant basil leaves. This pizza is light yet satisfying, balancing a flavorful combination of ingredients for a wholesome meal.
INGREDIENTS
200g Cauliflower
2 Large Eggs
56g Shredded Part-Skim Mozzarella
1/3 cup Tomato Sauce
2 oz Fresh Mozzarella
5g Fresh Basil Leaves
1 tsp Oregano
Salt & Pepper to taste
PREPARATION
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
Rice the cauliflower by pulsing it in a food processor until it resembles rice-sized pieces. Lightly steam the riced cauliflower until tender, about 5 minutes, then let it cool.
In a bowl, combine the cooled cauliflower, 2 large eggs, and shredded part-skim mozzarella cheese. Mix well and season with a pinch of salt, pepper, and dried oregano.
Transfer the mixture onto the prepared baking sheet and press it into a thin, even circle to form the crust.
Bake the crust for 15-20 minutes until it starts to brown and firm up.
Remove the crust from the oven and spread the tomato sauce evenly over the top.
Layer sliced fresh mozzarella cheese on top of the sauce, then return the pizza to the oven and bake for an additional 8-10 minutes until the cheese is melted and bubbly.
Garnish with fresh basil leaves, add extra salt and pepper if desired, and serve hot.
