PREPARATION
Preheat a non-stick skillet over medium heat.
Pour egg whites into a bowl, whisk until slightly frothy.
Slice the turkey sausage into rounds.
Add 2 tsp of olive oil to the skillet. Sauté the turkey sausage rounds for 2-3 minutes on each side until lightly browned.
Remove the sausage and set aside. In the same skillet, add the remaining olive oil.
Add the raw spinach and sauté for about 1-2 minutes until wilted.
