A warm, comforting twist on mac 'n' cheese featuring tender, oven-roasted cauliflower tossed in a creamy, cheesy sauce and crowned with irresistibly crispy, spiced chickpea crumbs. This dish offers a delightful medley of textures and flavors that make it a perfect hearty meal any time of day.
INGREDIENTS
400 grams Cauliflower
1/2 cup drained Canned Chickpeas
2 ounces Low-Fat Cheddar Cheese
1 cup Unsweetened Almond Milk
2 tablespoons Nutritional Yeast
1 teaspoon Garlic Powder
1 teaspoon Onion Powder
Salt & Pepper to taste
PREPARATION
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Cut the cauliflower into bite-sized florets and steam or boil until just tender (about 5-7 minutes). Drain well.
In a blender, combine the steamed cauliflower, unsweetened almond milk, 1 ounce of low-fat cheddar cheese, nutritional yeast, garlic powder, onion powder, salt, and pepper. Blend until smooth to create a creamy sauce.
Transfer the sauce to an ovenproof dish. Stir in the remaining cheddar cheese, allowing it to melt into the warm sauce.
Rinse and drain the chickpeas. Pat them dry with paper towels. Lightly smash them with a fork or pulse briefly in a food processor to achieve a crumbly texture but not a paste.
Sprinkle the chickpea crumbs evenly over the cheesy cauliflower sauce.
Bake in the preheated oven for 15-20 minutes until the top is golden and crispy. If desired, switch to broil for the last 2-3 minutes to crisp up the chickpea topping further.
Remove from the oven and let it cool slightly before serving.
