INGREDIENTS
1 medium Sweet Potato
1/2 cup Plain Nonfat Greek Yogurt
3 slices Turkey Bacon
1 teaspoon Olive Oil
1/2 teaspoon Dried Rosemary
1/2 teaspoon Dried Thyme
Salt and Pepper to taste
PREPARATION
Preheat the oven to 400°F.
Wash the sweet potato thoroughly and pat dry. Poke several holes in it using a fork.
Toss the sweet potato with olive oil, dried rosemary, dried thyme, and a pinch of salt and pepper.
Place the sweet potato on a baking tray and roast in the oven for about 40-45 minutes or until fork-tender.
While the sweet potato is roasting, cook the turkey bacon in a non-stick pan over medium heat until crispy, about 5-7 minutes. Remove and let drain on paper towels.
Once the sweet potato is done, slice it open and fluff the inside with a fork.
Top the roasted sweet potato with Greek yogurt and crumbled turkey bacon.
Season with an extra dash of salt and pepper if desired, and serve warm.
