INGREDIENTS
1 medium Sweet Potato (150g)
0.75 cup Nonfat Greek Yogurt (170g)
0.5 cup Low-Fat Cottage Cheese (113g)
1 teaspoon Olive Oil
2 tablespoons Fresh Herbs (Parsley & Dill)
Salt and Black Pepper to taste
PREPARATION
Preheat your oven to 425°F (220°C).
Wash the sweet potato thoroughly to retain a crispy skin. Pierce it several times with a fork.
Lightly rub the sweet potato with olive oil and season with a pinch of salt.
Place the sweet potato on a baking sheet and roast for about 35-40 minutes, or until the skin is crispy and the inside is tender.
While the sweet potato is roasting, mix the Greek yogurt and low-fat cottage cheese in a bowl. Stir in the finely chopped fresh herbs and add a dash of salt and pepper.
Once the sweet potato is done, let it cool slightly before slicing it open.
Scoop a portion of the creamy yogurt and cottage cheese mixture onto the sweet potato, then drizzle any remaining olive oil over the top.
Garnish with additional herbs if desired and serve warm.
