INGREDIENTS
3 cups Cauliflower Florets (approx 300g)
2 ounces Low-Fat Cheddar Cheese (approx 56g)
1/2 cup Nonfat Greek Yogurt (approx 130g)
1/2 cup Unsweetened Almond Milk (approx 120g)
1/4 cup Whole Wheat Breadcrumbs (approx 30g)
1 teaspoon Olive Oil
1 teaspoon Garlic Powder
1 teaspoon Onion Powder
1 teaspoon Dry Mustard Powder
Salt & Black Pepper to taste
PREPARATION
Preheat your oven to 400°F.
Steam the cauliflower florets until they are fork-tender, about 6-8 minutes. Drain well.
In a blender, combine the steamed cauliflower, low-fat cheddar cheese, nonfat Greek yogurt, unsweetened almond milk, garlic powder, onion powder, dry mustard powder, salt, and black pepper. Blend until smooth and creamy.
Pour the creamy sauce into a lightly greased baking dish. Optionally, toss additional cauliflower florets into the sauce for extra texture.
In a small bowl, mix the whole wheat breadcrumbs with olive oil. Sprinkle the breadcrumb mixture evenly over the top of the dish.
Bake in the preheated oven for 15-20 minutes until the topping is golden brown and the sauce is bubbly.
Remove from the oven and let stand for a few minutes before serving.
