PREPARATION
Preheat the oven to 425°F (220°C). Toss the baby potatoes with a light spray of olive oil, salt, pepper, and chopped rosemary. Spread them in a single layer on a baking sheet.
Roast the potatoes in the preheated oven for 20-25 minutes until they are tender and golden brown, stirring once halfway through.
While the potatoes roast, season the lean sirloin steak with salt and pepper on both sides.
