INGREDIENTS
2 cups Cauliflower Rice (approx. 150g)
1 large Egg
4 oz Fresh Mozzarella
1 oz Parmesan Cheese
1 medium Tomato
1 tsp Olive Oil
1/2 cup Fresh Basil Leaves
Salt & Pepper to taste
PREPARATION
Preheat your oven to 425 °F.
Lightly steam or microwave the cauliflower rice until just tender. Allow it to cool slightly, then place it in a clean kitchen towel and squeeze out any excess moisture.
In a bowl, combine the drained cauliflower rice, egg, a pinch of salt and pepper. Mix thoroughly to form a dough-like mixture.
On a parchment-lined baking sheet, spread the cauliflower mixture into a thin, even circle forming the crust.
Bake the crust in the preheated oven for about 12-15 minutes, or until it begins to firm and get lightly golden.
Remove the crust from the oven and layer with slices of fresh mozzarella and tomato, then sprinkle the Parmesan cheese on top.
Drizzle with olive oil and return the pizza to the oven for an additional 6-8 minutes, or until the cheese is melted and slightly bubbly.
Once baked, remove from the oven and immediately garnish with fresh basil leaves. Season with extra salt and pepper if desired.
Allow the pizza to cool for a few minutes before slicing and serving.
