INGREDIENTS
1/2 cup Rolled Oats (dry)
1 medium Banana
4 large Egg Whites
1/2 cup Nonfat Greek Yogurt
1 scoop Vanilla Whey Protein Powder
1 tsp Baking Powder
1/2 tsp Cinnamon
1 tsp Maple Syrup
1/2 tsp Vanilla Extract
PREPARATION
In a bowl, blend the rolled oats in a blender or food processor to create a fine oat flour.
Add the egg whites, nonfat Greek yogurt, vanilla whey protein powder, baking powder, cinnamon, and vanilla extract to the oat flour and blend until smooth.
Slice the banana into thin rounds. In a non-stick skillet over medium heat, add the banana slices and a teaspoon of maple syrup. Cook for 1-2 minutes on each side until the bananas are lightly caramelized.
Pour the pancake batter onto the heated non-stick skillet, forming small pancakes. Cook for about 2-3 minutes until bubbles appear on the surface, then flip and cook for another 2 minutes until golden brown.
Plate the pancakes and top them with the caramelized banana slices. Drizzle any remaining maple syrup from the skillet over the top if desired.
