PREPARATION
Preheat your oven to 425°F (220°C).
Break the cauliflower into florets and pulse in a food processor until it becomes rice-like. Transfer to a microwave-safe bowl and microwave on high for 4-5 minutes, then allow to cool slightly.
Mix the cooked cauliflower with the egg white, half of the mozzarella cheese, and a pinch of Italian herbs until well combined. Press the mixture onto a baking sheet lined with parchment paper to form a thin, even crust.
Bake the cauliflower crust in the preheated oven for about 12-15 minutes or until it starts to firm up and slightly brown on the edges.
Remove the crust from the oven and spread the tomato sauce evenly over the surface. Arrange slices or crumbles of lean turkey sausage and turkey pepperoni on top. Sprinkle the remaining mozzarella cheese over the meats and garnish with fresh basil leaves.
