Preheat your oven to 400°F.
In a small bowl, combine honey, minced garlic, and BBQ sauce to create the glaze.
Season the chicken breast with salt and pepper. Brush the chicken generously with the honey-garlic glaze.
Place the glazed chicken on a baking tray lined with parchment paper.
Wash the sweet potato and cut it into cubes. Toss with olive oil, salt, and pepper.
Spread the sweet potato cubes on another baking tray in a single layer.
Place both trays in the oven. Roast the sweet potatoes for about 25-30 minutes until tender and slightly caramelized, stirring halfway through.
Bake the chicken for about 20-25 minutes until the internal temperature reaches 165°F, basting with additional glaze halfway if desired.
Once cooked, remove from the oven and let the chicken rest for a few minutes. Serve the glazed chicken alongside the roasted sweet potatoes.
