INGREDIENTS
0.5 head Cauliflower (300g)
1 large Egg (50g)
3 oz Fresh Mozzarella Cheese (85g)
0.5 cup Tomato Sauce (125g)
1 handful Fresh Basil (5g)
1 teaspoon Olive Oil (5g)
Salt and Pepper to taste
PREPARATION
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
Break the cauliflower into florets and pulse in a food processor until you achieve a rice-like texture. Transfer to a microwave-safe bowl and microwave for 5-6 minutes until softened.
Once cooled, place the cauliflower in a clean kitchen towel and squeeze out as much moisture as possible.
Combine the dried cauliflower with the egg, a pinch of salt and pepper, and mix until it forms a batter. Press the mixture onto the baking sheet to form a thin, even circle representing your crust.
Bake the crust for about 15-18 minutes or until the edges begin to turn golden and crisp.
Remove from the oven and spread the tomato sauce evenly over the crust. Top with freshly torn mozzarella pieces.
Return to the oven and bake for an additional 5-7 minutes, until the cheese is melted and bubbly.
Garnish with fresh basil leaves, drizzle with olive oil, and serve hot.
