Crispy Chicken Cobb with Fresh Herbs
Enjoy a vibrant twist on the classic Cobb salad with a crispy chicken component accompanied by a medley of fresh herbs and wholesome toppings. This dish balances crunchy textures with the creaminess of avocado and the simplicity of lightly cooked egg and turkey bacon, making it a satisfying option for breakfast, lunch, or dinner.
INGREDIENTS
4 oz Chicken Breast
1 Egg
1 slice Turkey Bacon
0.5 portion Avocado (approx. 50g)
0.5 cup Cherry Tomatoes
2 tbsp Fresh Mixed Herbs
2 tbsp Whole Wheat Panko Breadcrumbs
PREPARATION
Preheat the oven to 425°F.
Pat the chicken breast dry and season lightly with salt, pepper, and chopped fresh herbs.
Lightly coat the chicken breast with egg (beat the egg in a shallow bowl) and then press it into the whole wheat panko breadcrumbs to form a crispy crust.
Place the breaded chicken breast on a baking sheet lined with parchment paper and bake for 18-20 minutes, or until the internal temperature reaches 165°F and the crust is golden and crunchy.
While the chicken is baking, cook the turkey bacon in a skillet over medium heat until crispy. Set aside to drain on paper towels.
In a bowl, combine the halved cherry tomatoes, sliced avocado, and additional chopped fresh herbs.
When the chicken is done, slice it and gently mix in with the fresh ingredients along with the crispy turkey bacon. Top the salad with a lightly fried or poached egg if desired.
Serve immediately and enjoy the blend of crisp textures and fresh, herby flavors.
