INGREDIENTS
1.3 cups Cooked Lentils (260g)
1 cup Mixed Vegetables (150g)
1/3 cup Whole Wheat Dough (53g)
1 tsp assorted Spices (cumin, coriander, turmeric, salt, pepper)
2 tbsp Mint Chutney (30g)
PREPARATION
Preheat your oven to 400°F (200°C).
In a bowl, gently mix the cooked lentils with the mixed vegetables. Add the spices and stir to combine well.
Roll out the whole wheat dough into a thin sheet on a lightly floured surface. Cut the dough into equal squares.
Place a spoonful of the lentil-vegetable mixture onto the center of each dough square. Fold the edges to form a triangle, sealing the edges by pressing gently.
Arrange the samosas on a baking sheet lined with parchment paper. Brush lightly with a small amount of water or olive oil to help with browning.
Bake for 20-25 minutes or until the samosas are golden and crisp.
Serve warm with a side of refreshing mint chutney.
