PREPARATION
Preheat your oven to 400°F. Pierce the sweet potato a few times with a fork, then bake it for about 40 minutes until tender, or microwave it until soft if short on time.
While the sweet potato is cooking, dice the red bell pepper and red onion. Roughly chop the spinach and set it aside.
In a skillet over medium heat, slice the turkey sausage links into rounds and sauté them until lightly browned. Remove from the skillet and set aside.
